This boneless side will be chilled and remain in the foil and inner cling film to retain moisture. It is best sliced when cooled (around 30 slices per side to serve 10-12 hungry people or less with leftovers then warmed with a small amount of water in the bottom of a dish wrapped tightly with foil.
